Grandma Davis' Potato Salad


 My mom's side of the family would admit they eat to live, not live to eat. Every once in a while, however, they came up with a really good meal and this potato salad is an example. It's just simple and it works.


Recipe:

4 lbs. of potatoes, peeled

1 cup chopped red or yellow onion

1 cup chopped celery

1 cup chopped hard boiled eggs

1 cup chopped sweet pickles

Sweet pickle juice to taste

Mayonnaise to taste


Quarter the potatoes and boil until you can poke a form part way through but not all the way. Too soft and the salad will have a mushy texture. Drain and cube cooked potatoes then place into a bowl with other ingredients and mix until well coated. The pickle juice and mayo amounts are to your own preference though the salad is supposed to be slightly sweet. I sprinkle a little paprika on top for color and add some chopped green onion.

You can turn this into a pasta salad easily by swapping the potatoes out for macaroni, rotini, or tiny shells.
